Take good apples and good spices and figs and raisins and pears, and when they are well chopped colour with saffron and put it in a coffin (crust) and put it forth to bake well.
- 2lb tart apples (can include up to two pears)
- ½ cup dried figs or prunes
- 1/3 cup raisins
- ½ cup brown sugar
- ¼ tsp each cinnamon, nutmeg, mace, salt
- 1/8 tsp ground cloves
- Pinch saffron
- Pastry shell for one 9-inch tart
Peel and core the fruit, and chip very finely, preferably in a food processor. Put the fruits in the prepared pastry shell. Combine the sugar and spices and mix well, and spread over the fruit. Cover the pie with aluminum foil to prevent burning, and bake at 375F for about 45 minutes, removing the foil toward the end of the cooking time.
